Little Bites of Heaven Recipe.




Ever crave something sweet but don't feel like making 20 portions of it? Of course not, that's a silly question. The only reason people bake is to eat all those extra portions. Cupcakes for 24 anyone?
But really. I found this great recipe by Anna Olson for individual brownie cups, though I added some major alterations. I did make one mistake, however - baking soda instead of baking powder. Blerg. So I'd recommend following those key ingredients to a tee without mistakes. Mine turned out a little crumbly, but like a halfway mix between a crumbly cookie and chocolate cake. Worked for me :) I also used 1 medium-sized muffin pan instead of 2 mini ones.
Recipe:
Ingredients:
  • 1/3 cup unsalted butter, cut into pieces
  • ounces white chocolate, chopped
  • egg
  • cup sugar
  • teaspoons vanilla
  • cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Directions: 

  • Preheat oven to 350 F.
  • Butter and flour a mini-muffin tin.
  • Over a pot of simmering water, melt butter halfway. Add white chocolate and stir until melted. Allow to cool to room temperature.
  • In a mixer fitted with the whisk attachment (or with an electric mixer), whip eggs, sugar and vanilla until pale and thick. Reduce speed to medium and add chocolate mixture.
  • In a separate bowl, sift together flour, baking powder and salt and stir into egg mixture. Spoon into prepared pan.
  • Bake 18-25 minutes.

    Homemade Mug Cake!

    Step 1: Dry Ingredients
    Step 2: Mix into wet ingredients 
    Step 3: Microwave into pure heaven!

    I know it's incredibly easy to google a recipe for mug cake (though nothing is as sinfully delicious and rich as the store bought one from a box) but here's my personal favourite.

    Dry Ingredients:
    3 tbs Flour
    3 tbs Sugar
    2 tbs Cocoa
    1/4 tsp baking powder
    Pinch of Salt
    As many chocolate chips as your heart desires.

    Wet Ingredients:
    1 Egg
    2 tbs Milk
    2 tbs Oil
    Splash of vanilla extract

    Optional:
    - Chocolate chips (highly recommended!)
    - Instant espresso powder
    - Almond or mint extract

    Directions:
    Pretty standard, simply combine your ingredients in a big fat mug! I prefer to mix the wet separately to ensure the egg is throughly distributed, and then try not to over-mix the batter -- that's never good! Finally, microwave for 2 1/2 - 3 mins :) I use 2 1/2, by the way. Let it cool for a few mins and transfer onto a plate if you wish.

    ps. Yes, it does kind of explode over the top of the mug in an awesome way :)

    Recipe: Chocolate Dips!


    I needed a pick-me-up today. A BIG pick-me-up. And what better way is there to cheer oneself up than with chocolate? I don't think there is one. Perhaps a puppy. Anyhow, this is a pretty self-explanatory recipe, but I thought I'd post it in case there is someone out there who has yet to actually make chocolate-dipped fruit themself. And you haven't lived until you have!

    Step 1: Find fruits and chocolate. Preferably ripe fruit and preferably chocolate chips/bars of chocolate.
    Step 2: Make a double-broiler: Heat water on low and place a bowl on top to gently heat the chocolate, keep stirring so it doesn't burn! Add a small dash of cream if your chocolate is too thick.
    Step 3: Dip things in chocolate.
    Step 4: Place in refrigerator for 20-ish minutes or until brown goo stops dripping off your food.
    Step 5: Enjoy one of the simplest/delicious treats known to man.
